Cooking On A Budget - Spanish Chicken


Another Family favourite here at The Syders is this Spanish Chicken dish. Plates are literally licked clean when I cook this one. Its not spicy, so the younger kids are fine with it too.

Ingredients - Serves 6 - Cost - Approx £2 per head.
  • 6 x Chicken Breasts
  • 1 x Can Cannellini Beans
  • 1 x Can of Chopped Tomato's
  • 1 x Chorizo Sausage
  • 1 x Onion, Chopped
  • 2 x Garlic Cloves, Crushed
  • 1 tbsp Olive Oil
  • A Few Sprigs Of Fresh Thyme
  • 200ml of Water
  • Fresh Peppers, chopped (optional)

Method

1. Slice the chicken breasts into chunks, put into a big pot and lightly fry in the olive oil.
2. Slice up the Chorizo and fry lightly in a separate pan.
3. Add the onion & garlic to the frying chicken.
4. When the Chorizo is browned add to the chicken.
5. Drain the cannellini beans and add to the pot. Stir in the tomato's.
6. Add the water and season with some chopped thyme, salt & pepper.
7. We like Chopped peppers in ours so if you want to, you can add some to the pot now.
8. Leave to simmer slowly for approx 30 mins.
9. Serve with pasta or rice.
